... Posted June 21, 2017 Report Share Posted June 21, 2017 Tonight:- WARM NEW POTATO & SMOKED MACKEREL SALAD. (Serves two). Ingredients:- 350g new potato 100g creme fraiche 1 tsp horseradish cream juice 1 lemon 2 smoked mackerel fillets (about 200g total weight), skinned and flaked 85g bag watercress. Method 1) Cook the potatoes in a large pan of boiling salted water for 15-20 minutes or until tender. 2) While the potatoes are cooking, mix the creme fraiche in a large bowl with the horseradish cream and lemon juice. Season well with freshly ground black pepper, but no salt. 3) Drain the potatoes, halve and set aside to cool down for a few minutes. Tip into the creme fraiche mix and stir so it coats them and becomes quite runny. Now add the smoked mackerel and watercress and toss gently together. Ingredients:- 2 x nice salmon fillets 1 x large Mike Huntz of butter Rapeseed oil 1 x heaped tspn Fennel Seeds 1 x large pinch Saffron 1 x bunch asparagus New potatoes. METHOD:- Boil the new potatoes in salted water for 15 mins or until cooked to taste. (For the final 5 minutes, place the asparagus in a colander over the spuds, and steam until tender). Meanwhile, heat a large non-stick pan with the butter, oil, fennel and saffron. Season the salmon with ground black pepper, and cook for approx 4 minutes each side, skin side down first.
