It needs a flat pasta such as Tagliatelle or Papardelle for the ragu to cling to. I make it every Saturday. Our favourite meal. Like your podcasts. Thanks. I'm not really one for meat pastas personally. Partial to a puttanesca more than anything. Conchiglie, tagliatelle and fusilli probably my top three pasta shapes in case you're wondering.
