Culinary Covid

Two things have really made me enjoy cooking this pandemic;

- Hello Fresh / Gusto boxes. Really helps the ease of suggesting new dishes and stops having to buy packets of things to only use once. 

- Baking. Super easy and just very rewarding. Got a focaccia dough in the fridge tonight. Took about 15 mins to make, tomorrow its about 15 mins more of prep and that's it (aside from cooking times). 30 mins for 2 rosemary and red onion loaves. Excellent.

I got a US style skillet for Christmas, made in Tennessee. Planning to get a couple of fillet steaks from Gatcombe Farm next week and cook 'em up. Any tips chef?

We (Mrs) got a code from somewhere for a free hello fresh box. Was actually pleasantly surprised by it, found a few recipes weren't particularly "macro friendly" if you're that way inclined with your nutrition either gaining or losing weight. I think there was a butternut squash dish and it had about 6g of protein so we just added chicken to it and it was great. Would definitely recommend though to people looking to make healthier meals that aren't too confident in the kitchen

Im the chef in our house, but after a year of cooking id kind of lost my Mojo. My son has taken my job over now and he uses Hello Fresh. Pretty good value too i would say - particularly the first couple of weeks, and some really good recipes

Also just ordered  https://aktarathome.co.uk/ curry box. Michelin star curry incoming !

Interestingly, you probably swallow several billion with each inhalation.

Most do nothing and even most malignant ones do nothing.

We wee them all out, sometimes they will be dead after their journey through your body, sometimes they are still active.

There. If that doesn't put people off their food, I don't know what will.  :laughcont:

Make sure you buy quality steaks - sounds like you are, the Tesco 30 day aged are pretty good if you can’t get to a specialist supplier or butcher.  Make sure it has enough fat, take it out of the fridge and let it get to room temperature before cooking, makes it easier to get the blue/rare/medium right.  (Deliberately leave out well done, as only philistines ask for well done steak - may as well have a burger).

Get you skillet hot, season the steak with sea salt and freshly ground pepper, lay it in the skillet, cook for the required time on one side without moving, turn and cook again for the required time.  Remove from skillet, admire your handiwork and the seared lines, leave on a warm plate to rest for at least 5 minutes, sort out the chips and mushrooms, plate them , then plate the steak.  Enjoy steak with a robust red of your choice.

I have been a keen home cook for years, but I must admit, every now and then I get a Hello Fresh box, it’s always been decent quality ingredients and I’ve never had anything I didn’t like.  Actually had one delivered yesterday, last night was pork and black bean tacos, lovely.

Much like me really. I do all the cooking these days and it is difficult to come up with different ideas. Did a nice tagine de kefta last nice and chinese stir fry prawns tonight. Wife is not adventurous food wise which can be a pain. Shes Irish so her ideal meal is meat & 3 veg (beef, roast potatoes, boiled potatoes & mashed potatoes). Just took delivery of a Malaysian cook book so shes in for a few surprises like it or not.

Pretty much how I do them at the moment, good to hear I'm doing it right-ish.

Funnily enough, cooked my first Hello Fresh meal last night - cod with a cheesy chorizo crust. Very impressed. Also have the pork and black bean tacos in the fridge!

Quick to cook & very little work:

Tones Meaty Balls

Open bottle of wine and ensure it is not corked

Lob some meatballs in a frying pan and cook briefly to seal them.

Have a slurp

Mix together a packet of tomato s auce with chopped onions, garlic and some chilli powder (a jar of bolognaise mix works as well).

Have a slurp

Pour mix over meatballs and cook on a low heat for circa 20 mins.

Have a slurp

Go for a pee ensuring you wash your hands thoroughly while singing happy birthday to ensure properly clean.

Apply hand sanitiser.

Have a slurp

About 5 or so minutes before cooked crack open some eggs and pour over the meatballs etc and allow to poach.

Have a slurp

Serve with a nice salad and freshly cooked baguette (to soak up the s auce)

I cooked a steak a few weeks ago.Instructions were the usual,let it breathe at room temperature for 30 minutes, season with salt and pepper,I always add some Worcester Source too.Then it was in a frying pan to sear it both sides,then finish off in the oven.I have never cooked it like that before but it came out really well.To be honest it was cheap steak too,and I do like it well done.Would certainly recommend trying that cooking method.
