Posted September 21, 2013 Report Share Posted September 21, 2013 Saltembocca alla Horace:- 2 x medium sized hedgehog fillets 4 x large sage leaves 1 pack parma ham marsala cream salt and pepper polenta / pasta / potatoes. Flatten Horace fillets under cling film with a rolling pin; lay out each fillet, and place 2 sage leaves, and the parma ham on top, holding in place with a cocktail stick and season. Melt butter and oil in a skillet, and when hot, fry the fillets on each side for 2-3 minutes until golden and the ham is nearly crisp. Remove Horace from the pan, and keep warm. De-glaze the pan with 150ml of marsala, and add double cream to make a smooth sauce. Return Horace to the pan, and cook for a further 1-2 minutes. Serve immediately with either polenta, penne, or roast potatoes. This may seem like a faff, but is worth the effort. "Bon-appetito!" P.S. City to win 2-1. Pack isn't experienced at this level, I'll give you that but the team on a whole can much more easily be described as experienced rather than inexperienced.
